Beat 1 tsp. Peppermint extract into dough. Roll out 1/4" thick; cut out using 2" hexagonal cutter. Bake 10 minutes. Spread cooled cookies with plain Royal Icing. Immediately pipe 3 parallel lines of green Royal Icing over icing on each cookie; quickly pull wooden pick up & down through lines in feathered pattern. Decorate with sugared mint leaves & cup up red gumdrops for berries.
