Waffle Mix
Zutaten für 6 Portionen Menge anpassen
die Zutaten:
 Basic Mix
5 Tasseflour
4 Esslöffelsugar
2 Teelöffelsalt
 For 3 waffles:
eggs separated
1 Tassemilk room temperature
2 Esslöffelshortening melted
die Zubereitung:

2 tb Plus 2 ts baking powder 1 c Plus 2 tb mix

For basic mix combine all ingredients and store in airtight closed bag on cool pantry shelf. To make 3 waffles: Beat yolks in small bowl and beat in milk and cooled shortening. Shake bag of mix well and measure out 1 cup plus 2 tb mix.Add it to the yolk mixture, stirring only to blend.Beat whites stiff and fold into batter. Pour batter, 1/3 cup at a time into hot waffle iron and bake 4 to 6 minutes or until done. Serve hot Variations: Bluberry:fold in 1/2 cup blueberries plus 1 tbs sugar into batter Nut: add 2/3 cup favorite chopped nuts into batter Bacon: Fold in 1/2 cup crumbled crisp bacon into the batter. May substitute bacon fat for the melted shortening. Cheese:Fold in 1/2 cup favorite grated cheese into batter Apricot: Fold in 1/2 cup finely diced apricots into batter Coconut: Fold in 1/2 cup grated coconut into batter Chips: fold in 1/2 cup chocolate or butterscotch chips into batter Cherry:fold in 1/2 cup chopped and drained marachino cherries Pineapple: fold in 1/2 cup drained cruched pineapple Lemon:fold in 4 drops lemon extract plus 1 tbs grated lemon zest into batter Orange: same as lemon but substitute orange extract and orange zest Corn:fold in 3/4 cup well drained canned corn Spice: fold in 1 tbs sugar plus 1/2 tsp cinnamon plus 1/4 tsp each nutmeg and allspice into batter Date or raisin: fold in 1/3 cup chopped dates or raiains or currants into batter Topping Ideas For Cooked Waffles: Chipped beef Italian sausage , cheese and tomato sauce Thin slices of ham and cooked egg Chili Bacon and mornay sauce Sliced cooked chicken with herb or curry sauce Grilled tomatoes and sliced egg Sauteed onions, mushrooms and peppers etc. Etc.
