Dredge steaks with flour. Press pepper firmly into the flesh on both sides. Heat 25mL (2 Tbsp) butter and oil in a frying pan. Pan-fry fish, turning once during cooking. Allow 5 to 7 min per cm (10 to 12 min per inch) of thickness or cook until flesh is opaque and flakes easily. Season and transfer to heated platter. Add remaining butter and wine to pan and stir quickly. Pour over fish and serve.
