Rub roast thoroughly with mixture of preceding ingredients. Roast, uncovered, at 325° for about 2-1/2 hours. Meanwhile, prepare cherry sauce. For Sauce: combine sauce ingredients and bring just to boiling; simmer 1-4 minutes. Spoon sauce over the roast after it has cooked about 2-1/2 hours and cook roast another 30-45 minutes or until meat thermometer registers about 170°. Baste frequently. Sauce may be served with the roast.
