Prick sausages with a fork. In a large skillet, combine sausages, wine, and 1/2 cup water. Bring to a boil over high heat, reduce heat to medium-low, cover, and cook 5 minutes. Uncover, raise heat to medium, and cook, turning sausages occasionally, until most of the liquid is evaporated and sausages are browned and no longer pink in center, 5 to 7 minutes. Remove sausages with tongs and our any remaining liquid into spaghetti sauce. Do not wash skillet.
Add olive oil to skillet. Add onion and green pepper and cook over medium-high heat, stirring occasionally, until softened and lightly browned, about 4 minutes. Cut sausages into 1/2 inch slices and add to skillet. Stir in spaghetti sauce and cook for 1 minute, or until heated through.
Split rolls, spoon sausage and sauce onto bottom halves, sprinkle with cheese, and place tops on sandwiches.
