1. Cook the chicken with butter, oil, and rosemary 5 minutes per side at medium heat in a large skillet.
2. Cut whole tomatoes in 6 pieces and add to chicken.
3. Add crushed tomatoes and mix; add sugar, salt, and pepper. Stir.
4. Season the sauce to taste with basil, sage, rosemary and parsley.
5. Cook on low to medium heat for a few hours. If you want it to be done sooner than that, cook at higher heat to ensure complete cooking of the chicken.
Serving suggestions Very good with white seasoned with a touch of saffron. Excellent the second day after the seasoning have become better blended.
