Preheat oven to 350F. Cut the cheese into 1/2-inch cubes. Lightly coat a 16 x 13-inch baking sheet with vegetable cooking spray. Place 6 cubes at a time on the sheet, approximately 6 inches apart. Bake for 3-5 minutes, watching very carefully. The cheese will melt and bubble up; when the bubbling stops, the wafer is done. Remove immediately with a meal spatula to a rack that has been covered with paper toweling. When cool, pack in a tightly covered container. Makes approximately 48 wafers.
