Note 1: Original recipe called for frozen collard, kale, turnip or mustard greens
Note 2: Original recipe used uncooked converted long-grain white rice...we used this and I would not use it again. I have entered it as long-grain rice...be sure to adjust any extra water and cooking times for it.
In 2 qt heavy saucepan over med-high heat, cook bacon until crisp.
Stir in onions. Cook 5 - 6 minutes, stirring often, until onions are golden and tender. Add broth and frozen greens. Bring to a boil; cook 3 - 4 min, stirring occasionally, until greens are thawed.
Add rice and return liquid to a boil. Reduce heat to med-low. Cover and simmer 20 - 25 min, or until rice is firm but tender and liquid is absorbed.
To Microwave: Put bacon and onions in a 2 qt microwave-safe bowl. Microwave, uncovered, on High 3 - 4 min, stirring once, until bacon is crisp and onion tender. Pour in chicken broth and add greens. Cover with lid or vented plastic wrap. Microwave on High 4 - 5 min more, or until greens are easily broken up. Stir in rice. Cover and microwave on High 20 - 22 min more, stirring once, until rice is tender and all liquid is absorbed.
Serving: 6 Prep Time: About 5 min Cooking Time: About 40 min
This was good but mushy. I would not use the converted rice again.
