1. Make a selection of vegetables - for example celery, aubergines, leeks, courgettes, peppers, onions, tomatoes, cauliflower, mushrooms (all raw). Cut into 2-inch (5cm) lengths and marinate in olive oil and dried mixed herbs for about an hour, turning them occasionally. Skewer and grill under a medium heat for 15-20 minutes, adding later courgettes which take 10 minutes to cook, and tomatoes and mushrooms, which take only 5. Turn occasionally, until they are cooked through. You are in for a delicious surprise !
