Let cheeses and butter warm to room temperature. With the metal blade in place, add cheeses, butter and brandy to beaker of food processor. Process, turning on and off continuously, for about 20 seconds. Then continue processing until a smooth spread is formed, about 20 seconds. Makes about 2 cups.
