Stir-fry garlic and ginger in oil until fragrant; add onion and stir-fry for another minute. Revove ginger. Add bell peppers and continue stir-frying for another minute.
(Note: Venison should be sliced across the grain of the meat to get maximum tendernes. Meat can be marinated in 1 T Soy Sauce.
Mix in the venison and stir-fry until meat is cooked. Do not overcook. Season with soy sauce, sugar, salt and pepper. Removed from pan and serve
