Marlin with Warm Lemon And Oregano Dressing

For The Marlin Steaks
1 Esslöffelolive oil
 salt
 black pepper freshly ground
Marlin steaks; approximately 175g
 (6oz) in weight and
 2cm (1 inch) in
 Thickness
For The Lemon And Oregano Dr
150 MilliliterExtra virgin olive oil; ( 1/4 pint)
90 MilliliterHot water; (3fl oz)
Limes; juice of
Cloves garlic finely chopped
20 grams pac fresh flat leaf parsley; finely chopped
1/2 Teelöffeloregano dried
die Zubereitung:

Heat the olive oil in a large frying pan or griddle pan until very hot.

Season the marlin steaks with salt and freshly ground black pepper and cook for 3 minutes on each side, increasing the cooking time for a thicker steak.

In the meantime make the dressing; place the olive oil in a mixing bowl, then slowly whisk in the hot water and lime juice. Add the garlic, parsley and oregano and whisk until smooth and emulsified.

Serve the marlin steaks with the warm dressing drizzled over. Serve immediately.
